I’ve been making this since I got married. It’s comes together so simple and I usually always seem to have the ingredients on hand.

My hubby called me at 4:30 the other Friday night and informed me that he was going to trim our trees with his brother and then pretty much informed me that I needed to feed them. Uh say what? Friday’s are usually my days to take a bit of a break and throw in a pizza. I’m not going to lie and say I always have amazing meals just waiting to be prepared. I slack. This was my slack night.

Off to the grocery store I went to get some chicken. Luckily this comes together easy so I had time to make Crack Potatoes. Those were amazing also! The guys inhaled everything and then night was a success. Miss Kinz even behaved while I whipped it up so double bonus! *EDITED – My little brother actually read this post and was quite upset with me and gave me a lecture on how he was over and he took care of Miss Kinz while I made supper so KUDOS to you little bro for helping your sista out and taking care of Kinz. She loves you!! So does her mamma 🙂

French’s Crunchy Onion Chicken

Ingredients
2 c. French’s Original or Cheddar French Fried Onions
2 Tbsp all-purpose flour
4 boneless skinless chicken breasts
1 egg, beaten

1. Place French Fried Onions and flour into plastic bag. Lightly crush with hands or with a rolling pin. Transfer to pie plate.

2. Dip chicken into egg; then coat with onion crumbs, pressing firmly to adhere. Place chicken on baking shet.

3. Bake at 400 degrees for 20 minutes or until no longer pink in center.

Crack Potatoes

Well we have Crack Dip and now we have Crack Potatoes. The Crack dip is one of the most popular blog posts on the blog. I’m guessing it just might be in the name!

These potatoes are AH-MAZ-ING! Like stuff your face in the plate good. They make 3 lbs of potatoes and let’s just say between three of us we polished off all of them. Carb overload anyone?! My little bro happened to be there the night I made these and he had already made dinner plans so as we were scarfing these down and oohing and aahing over them he was telling us to shut our holes. What can I say? He totally missed out on pure deliciousness!

There’s even an added bonus. They are SO EASY! You don’t even have to peel the potatoes!

If you are looking for a sure hit dish for tonight this is your ticket!

Crack Potatoes

Ingredients

3 lb potatoes, washed and cubed
4 Tbsp, butter, cubed
1/4 c. Real Bacon Bits
1/4 c. ranch dressing
1/2 c. cheese

1. Put potatoes in an 8×8 in glass dish. Put butter on top of potatoes. Sprinkle bacon bit on top. Cover with aluminim foil and bake at 400 degrees for 1 hour.

2. Take potatoes out of oven and top with ranch dressing and cheese. Stir. Put back in oven until cheese is melted.

Funfetti Cake Batter Dip

Wow another month has went by and it’s time for Secret Recipe Club reveal day once again!

I love checking out the blog I’m assigned every month. It’s like Christmas when I get my email with my assignment in it. I get to open it and then go on my merry way and try a fantabulous new recipe!

This month I was assigned The Boys Made Me Do It. Cara has sa super cute blog over there and highly recommend you check it out. The background of her blog made me smile. It just looks so happy! I went browsing through her recipes and came across Funfetti Cake Batter Dip. I’ve seen this floating around in blogland and on Pinterest and decided it was high time I tried it.

I ended up making it the day of our nephew’s 1st birthday party so I brought it to share. It was a hit that’s for sure! My sister-in-law compared it to “Dunkaroos”. Do you remember those little packages of yuminess? They used to be one of my favorite treats! I also had a couple people ask if it was on my blog. I assured them it would be soon!

If you are looking for an easy treat this is it! My hubby just got his nighttime snack and it was this. Guess he didn’t get enough the first two times he ate it today!

Funfetti Cake Batter Dip

Ingredients
3 Tbsp Funfetti cake mix
2 Tbsp plain yogurt
1 Tbsp cool whip

1. Stir cake mix and yogurt until smooth.

2. Fold in cool whip.

3. Refrigerate until serving.

4. Serve with fruit, vanilla wafers or animal crackers.

Nutter Butter Krispie Treats

This past weekend I went out to my mom’s house while the hubby went over to a friends house to install a counter top. Sometimes I just need “mom” time. Well actually probably more than adult should need, but there is just this “understanding” between me and my mom. She’s probably my best friend. Yup without a doubt. So when I went out there I grabbed some ingredients, the ones I had and knew she’d have the rest to try out a new bar recipe. She played with Miss K while I got to work. Let’s just say – EPIC FAIL. It was supposed to be this yummy peanut butter infused bar and well we had a good laugh as we all tried to get the overly peanut buttery bar off the top of our mouths. My little bro was making so much fun of me I had tears I was laughing so hard. Let’s just say it went straight into the garbage along with the recipe. Just so you know not everything turns out that I make. You only see the best!

I had to redeem myself so a couple days later I tried this recipe. I figured by looking at the ingredients there was no way possible that this could be another EPIC FAIL. I was right! These super yummy treats are thicker than a regular Rice Krispie Bar and have just the right amount peanut butter unlike the other recipe!

Nutter Butter Krispie Bars

Ingredients
1 (16 oz) package of Nutter Butter Cookies, chopped
6 c. rice krispie cereal
1/2 c. butter
2 (10.5 oz) bags mini marshmallows

1. In a large sauce pan melt your butter over low heat. Key word is LARGE. Mine was overflowing!

2. Still on low heat, add the marshmallows to the melted butter and stir until marshmallows are melted.

3. Remove from heat and stir in your rice krispies and chopped Nutter Butter cookies.

4. When combined, pour mixture into prepared pan and press evenly.

5. Allow to cool, about 20-30 minutes and cut into squares.

*Store in an airtight container for up to 3 days

Woohoo for SIMPLE!

I saw this on Pinterest and pinned it on my board with my million other recipes thinking some day I’d get around to it. I ran into my cousin’s wife this weekend and she asked if I had made it yet because she had saw that I pinned it. I laughed and said no not yet. Well she had. Then she raved about how moist and yummy the chicken was. Well then I knew I had to make it!

I’m also a big planner and had already planned my menu this week so I couldn’t make it. Well my supper date got cancelled and I just happened to have fresh green beans on hand so I whipped it up tonight. This is my kind of dish. Everything in one dish and you throw it together and then stick it in the oven!

I might try it with a half of a stick of butter next time. If anyone tries this before me let me know if it works! 

Green Beans, Chicken & Potatoes
Printer Friendly Recipe

Ingredients
4 medium potatoes, cut
2 c. green beans, cut
1 lb chicken breasts
1/2 c. butter
1 package Italian dressing mix

1. Cut green beans up. Line one side of the pan with green beans.

2. Cut potatoes up. Line opposite side of pan with the potatoes.

3. Line the chicken breasts down the middle of the baking dish.

4. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan. Cover with foil.

5. Bake at 350 degrees for 1 hr.

Egg in a Hole

I’ve seen this flying around on Pinterest and just had to try it out. Well it took me awhile but I finally got to try it!

This is the super easy perfect breakfast idea. The hubby loved it. We made, or should I say I, made it at the cabin one of the last weekends. It came together quick and easy.

It combines all the breakfast staples into a new and fun idea. If you get really crazy and wild you could always add some bacon or sausage in the middle. I think I’ll have to do that next time and then the hubby will really love it!

Cheesy Egg in a Hole

Ingredients
2 Slices bread
2 eggs
1/4 c. shredded cheese

1. Butter both sides of the bread. Using a round cookie cutter cut out the center of the bread slices, or if you are like me wing it and just use a knife.

2. Lay the bread down in a preheated pan. Crack an egg into each hole.

3. When the egg is starting to set, flip over the bread and cook it on the other side. Cook until the egg is set, but the yolk is still runny.

4. Layer the cheese on one bread slice and then flip the other slice on top. I did this a little backwards as you can see! That’s it you are done after the cheese melts!

Grilled Zucchini

Oh my this is so super easy I don’t think I can really call it a recipe!

I was looking for a way to use up all my zucchini and I love it when I got to a restaurant and get served a side of zucchini. With this in mind I decided to whip up my own side dish. I don’t know about you but I get tired of beans, peas, corn etc as my side dish every single night so this was a welcomed changed.

If you don’t want to grill this it can be easily made on the stove also! Here’s another way to use that zucchini up that you have coming out of your ears!


Grilled Zucchini

Ingredients
Zucchini
Butter
Lowry’s

1. Cut the zucchini into bit size pieces.

2. Place zucchini in aluminum foil. Cut butter into pieces and put it on the zucchini. Sprinkle with seasoning. Close foil up.

3. Grill on top rack of grill 5-10 minutes until down. Make sure not to let it to long. No one likes super soft and squishy zucchini!

*You can also do this on the stove in a frying pan!
